As a tribute to the hotel’s origins, the decoration of most restaurants and bars in the Saccharum hotel consists of pieces of antique machinery and metals that, in ancient times, were once used to distil liquids, such as rum.

Alambique Restaurant: Alambique offers a modern take of local cuisine, featuring fresh, seasonal local ingredients, many from the chef’s garden. The restaurant highlights Madeira Island’s sugar cane production history, with the name “Alambique” referring to the distillation apparatus used to make rum.
